Product description From 50-year-old vines in the historic “Cône de la Font des Papes” area of Gigondas, rooted in limestone fragments with a sandy-clay matrix. This single-plot vineyard, exposed to wind and sun, produces low-yield grapes (31 hl/ha). Grapes are chilled overnight, manually sorted, de-stemmed, and gravity-fed into vats. A 48-hour cold maceration precedes a 20-25 day fermentation in temperature-controlled stainless steel with daily pump-overs.
