2019 Domaine les Hautes Cances Cairanne Cuvée Col du Débat

Product description The ‘Col du Débat’ vineyard is situated high up on the slopes of the Ventabren Massif, with 60-year-old vines grown on this north-facing slope. Grapes are hand-harvested. After destemming, fermentation with local yeasts in large cement vats, without pumping over or racking. Fermented in old oak Burgundy barrels. The wine undergo no fining or filtering and are aged for two years before bottling without filtration. Elegant nose with notes of redcurrant, cherry, white pepper, and leather. The palate reveals sweet spices and red fruits, with a hint of cocoa, as well as very fine tobacco and vanilla notes. The tannins are round, leading to a long, persistent finish. Full in body, but has lovely chiselled structure and piercing acidity. Very well judged, a real achievement.
