The grapes selected for Carlo Rossi ICE were harvested at optimum maturity during low night temperatures, allowing the natural flavors of fresh fruit in the wine to be preserved. Our winemaker selected particularly aromatic yeast strains and used a cold fermentation process to produce expressive flavors and sensations.
